A detour from chocolates: Strawberry Cupcakes


I've had enough of chocolate cupcakes.. my kids have had enough of them.. even my husband, who loves chocolate, I suspect, is getting bored of them. Afterall I have been at it with the same flavour for a week!

I just love the world wide web... you can find anything and everything in there! As I was browsing the net for some more cupcake-inspired recipes, I chanced upon this photograph on flickr, a very yummilicious-looking cream-topped cupcake. And as I scrolled down to read the comments, I was surprised to see the recipe typed out... bless his kind heart.


I made slight adjustments, like reducing the sugar by 1/2 cup since I made the strawberry sauce sweet, and adding 1/2 tsp of vanilla essence. Instead of the cream cheese frosting, I used whipped cream because I was desperate to finish off that opened carton sitting in the fridge. Besides, with whipped cream, the frosting tastes lighter (felt less sinful too!).

For the quantity yielded by the cupcake recipe, here's the whipped cream frosting measurement:

- 1 cup whipping cream
- 2 tbsp icing sugar
- 1/4 tsp vanilla essence
Beat all the above till stiff before mixing in:
- 1/2 cup of the strawberry sauce


I have a suspicion that this strawberry whipped cream frosting would taste heavenly on chocolate cupcakes! O_O

Also, if you want to decorate the top with slices of strawberries, be sure to macerate them with sugar beforehand too.


So, tell me, does this look yummilicious or what? Wait till you taste it! :)

you know i am a straightforward person and i *think* that's why you like me right?
so just for your information...... whipping cream contains usually 40% fat while cream cheese's fat content is about 28%........hehehe so you can't feel less sinful.
but what the heck, the moment you decide to make cupcakes, calories is not really your prime concern.

aha woman! But you forgot to add the butter that's called for in the cream cheese frosting. I am sure the fat % is no longer 28%.. heh heh!! But, actually who cares. I care more about the taste than the fat... you know I never go for low-fat ice cream or low-fat milk, or low-calorie version of a food? I mean, you either go for it or you don't. Right?

Yes, yes, definitely look and must taste very yummilicious!!! These close-ups look even better than the earlier sneak peek!

Thanks for coming to my rescue, wonder gal with your wonderful suggestions! A big part of me is thinking of doing something familiar, can't really go wrong, like fried beehoon or noodle. Except may have to fry a few woks worth! See how...

Oh, btw, there's a very nice ring to "husband" as you now call D, isn't there? =)

I am neither a chocolate nor a strawberry person. I am a plain person, just butter or cheese alone with no flavour!

But, I am sure my children will love that yummilicious cupcakes with fresh strawberries on top. I don't seem to see the fresh ones around here in my town. But everytime I go to KL, I will take a small pack from the supermartket and handcarry back - just for Rachel. She is every inch a strawberry girl!

Will ask her to try your recipe. I think yours work!

Bp, then you fry one wok meehoon, and one wok a different kind of noodles, see which one more popular. :) Yes, my "husband" loves all the cakes I bake.. heehee..

Yan, my elder daughter is like that. Her preference is for all things plain, vanilla ice cream with no choc sauce, white porridge with salted eggs, milk non-flavoured. And butter, oh... she loves it.. she licks it off the bowl everytime I do my baking. Cheese.. she takes a few slices a day.. and yet she is still so skinny.

Yan, next time you come to KL, buy 2 packs of fresh strawberries back.. it will take that much to come up with this cupcakes and cream. I am positively sure your daughter will savour it and enjoy every bite... its so lovely (fragrant too) esp when eaten the next day! It's not my recipe by the way.. but this recipe really works! :)
