Because I had THE cravings, I planned to make a simple chilled chocolate pudding. My fickle mind also wanted brownies. Unable to decide, I asked my hubby to pick one and no prize for guessing his pick. So here's our after-dinner treat for today!



1/2 cup chopped walnuts (lightly toasted in the oven on a flatsheet)
170g unsalted butter, cubed
170g Unsweetened dark chocolate, chopped (I used Hershey's)
360g soft brown sugar
4 large eggs
1 tsp vanilla essence
1 cup flour
3/4 tsp baking powder
a small pinch of ground cinnamon
1/4 tsp salt
1. Line a 9x9 inch baking tin with baking paper. Preheat oven to 160 deg C.
2. Sift the flour and baking powder. Add the salt and cinnamon. Whisk to combine and set aside.
3. Melt butter and chocolate in a bowl, either in the microwave (high setting for 1 min) or over a simmering pot of water. Stir to ensure that all the chocolates are melted.
4. Pour the sugar into the melted butter+chocolate and whisk for 2-3 minutes.
5. Add one egg at a time and continue beating until the eggs are well incorporated into the mixture.
6. Whisk in the vanilla essence.
7. Using a wooden spatula, fold in the flour until it is well mixed into the batter. Do not over mix.
8. Pour the batter into the prepared baking tin and even out the batter. Sprinkle the chopped walnuts on top of the batter.
9. Bake at 160 deg C for approximately 45 minutes. Check for doneness by inserting a toothpick into the centre of the brownie. Toothpick should come out clean. If not, let it bake for another 5 minutes.
10. Cool brownie on a rack before slicing.

This piece of chocolate heaven should be enjoyed slightly warm, with vanilla ice-cream or coffee. Heat it up for a few seconds in the microwave or oven.

Quite shameful to say - anything to do with chocolate I just don't can't do it right. It always turn out try and cracky!

Hi Yan! When I cook, I never stinge on my ingredients. :)
If your cake turns out dry, it is because you've baked it longer than necessary. Try reducing the baking time.
If your cake turns out with cracks, it is because the oven temperature is too high, try reducing it. Do you have a small oven thermometer? Most oven's temperature are slightly off and a thermometer will help you greatly to set the temperature to the right setting so that your cake will not crack.
Don't give up!! I started off a few years ago with so much difficulties and I've only NOW begun to bake decent stuff. Hehehehe!

It turns out to be good, my sisters love it alot. Me too =P
Not too sweet, not too dry, soft and perfect !
I actually cut down the brown sugar to only 200g.
Because I suppose the cooking chocolate is already sweet.
I'll make it again this friday, I think I'll add more cooking chocolate to it. tee-hee

If you have a microwave, it's really nice served slightly warm, just 5-10 sec on high will do.
I used unsweetened chocolate, which is bitter. Your cooking chocolate is sweet yeah.. so you don't need to use the amount of sugar that I stated. Smart gal!
i had a traumatic childhood experience that involved walnuts, so i will skip the walnuts and have the brownie plain.

Kikare, bake without the nuts then! Pure chocolate goodness! Hehehehe.. Erm, you know, I have never baked muffins before! I have done lots of cupcakes and cakes but not muffins and I think the reason is because I have not bought a muffin pan. Is that a good excuse? haha... Anyway, if I do come across an easy and good muffin recipe, you'd be the first to know. :)
